Ingredients

  • 2 cups of plain flour
  • 1 large egg beaten
  • Enough sparkling water (or tap water, I buy carbonated water from the basics range, about £0.17p per 2ltr bottle so use this if I've got an open bottle)
  • 3 tablespoons of lemon juice (I use bottled)
  • 2 Basa (River cobbler) fillets, I like to use sustainably sourced fish wherever possible
  • S&P
  • Enough sunflower or vegetable oil in a frying pan to come half way up your fish fillets
