TabboulehServes 4 as a side salad100g bulgar wheat, quinoa or farrow1 small cucumber, diced1 small red onion, cut finelyHandful of cherry tomatoes, I used baby plum here, chopped1 avocado, diced - optionalLarge handful of fresh parsley Small handful of fresh mintJuice of one lemonDash of olive oil1 tsp vegetable stock 1 tsp cuminPepperAdd the cumin and teaspoon of stock to the dry grain and cook as per instructed, if necessary drain any excess water so the grain is fluffy and dry While it's cooking add all the chopped vegetables to a large bowlAdd the cooked grain and mix wellAdd the lemon juice, oil and pepperWill keep for a couple of days covered up in the fridge Perfect with the sweet potato falafels and even better with big chunks of barbecued halloumi cheese, or squeaky cheese as it's known in our house
