Turkish chicken stew

Serve with Turkish bread. 100 g sujuk, or spiced Turkish sausages, sliced. 1. Pre-heat the oven to 190C/170C/gas 5

Stuffed Turkish flat bread

1. For the dough. sift the flour and a teaspoon of salt together into a large bowl. Make a well in the centre, pour in the olive oil then gradually stir in enough water to make a nice ball of dough

Turkish borek

1. Mix the feta in a bowl with baby spinach, chillies, spring onions and dill. Season with salt and pepper

Turkish tomato dip

1. Quarter the tomatoes, taking out the seeds and core at the same time, then blitz in a food processor into chunks rather than a puree

Lamb shish and shepherd's salad

1 long pale green Turkish pepper, seeds removed and finely sliced. 1. Mix together the garlic, cumin and lamb, then leave to marinate at room temperature for a few hours, or overnight in the fridge

Poached quince

mascarpone, or Turkish kaymak. 1. For the poaching liquid. Bring all the ingredients for the poaching liquid except the lemon zest to a boil in a saucepan

Black sea baklava

1. Preheat the oven to 180C/160C fan/gas 4. 2. Put both kinds of nuts in the food processor along with half the sugar and pulse until finely chopped

Bulgur wheat salad

1. Put the kettle on and tip the bulgur wheat into a bowl. Measure out 200ml boiling water, stir in the tomato purée and pour over the bulgur wheat

Vegetable pilaff

1 long pale Turkish green pepper, sliced. 1. Rinse the rice well for a few minutes in a sieve under running cold water

Chicken, yogurt and mint soup

1. Marinade the diced chicken in the lemon juice, chopped garlic, extra virgin olive oil and pepper at room temperature

Lamb and aubergine kebabs

1. For the kebabs. Mix the kebab ingredients together except for the aubergines in a bowl and season heavily with salt and pepper then divide into four roughly even balls – it is best to use your hands for this
