Egg fried rice

Ingredients150g basmati rice1 large, free-range egglow calorie cooking sprayMethodCook rice according to packet instructionsDrain through a sieve, and set over the pan to allow it to steam away excess moisture for a couple of minutesbeat the eggHeat a wok/frying pan, spray with cooking spray and place the rice in it, making a well in the middle so you can see the bottom of the panPour the egg into the well, move a little of the rice aside to allow the egg to spread out a bitLeave for about 2-3 minutes- just long enough for the egg to 'set'- but not to overcookOnce the egg has solidified, stir it around and through the rice, making sure nothing's stuck to the pan

Egg Curry

An egg curry is the ideal. 6 Large eggs1 tsp ground cumin1 tsp ground coriander1 tsp ground turmeric1 tsp red chilli powder1/2 tsp garam masala1-2 tbsp water2 tbsp vegetable oil1 onion, peeled and finely chopped400 gm tomatoes, skinned and chopped1 tsp fine sea salthandful of corainder leaves, roughly chopped. Put the eggs in a medium saucepan and cover them with cold water2. When the begins to simmer, set the timer to 10 minutes for hard bolied eggs3. Remove the eggs with a slotted spoon and cool them in a bowl of iced water4. Add the onion and fry for 6-8 minutes, stirring occasionaly, until golden brown9. Carefully lower the boild eggs into the pan and simmer gently until heated through, trying not to stir too much so that the egg yolks remain with the white13
