Pork belly with bramley apples and parsnips

For the sauce. heat the butter in a pan, add the chopped apples and cook until softened. Add a splash of chicken stock and cook until the sauce has reduced slightly and has thickened

Sausages with apples and onions

Heat the oil in a large saucepan over a medium-low heat and add the sausages. Add the remaining ingredients to the pan and cook for a further five minutes until the apples are tender

Roast leg of pork

when the apples are soft, leave the sauce to cool slightly, then press through a metal sieve into a clean pan to remove any apple bits
