5 minute meals: Grilled hummus on toast and chilli-tahini kale and tofu salad

These are two recent meals that came together in hardly any time but still tasted delicious. Sometimes, even a 15 minute meal seems too much. When it's 2pm on a Saturday and you're keen for food in a hurry, or 8pm on a weeknight and you want a quick but satisfying meal, 5 to 10 minutes is the time frame I want to work to. Just lightly toast two pieces of bread, spread generously with hummus and some halved cherry tomatoes, and grill for up to 5 minutes or as long as it takes to melt the hummus and turn the edges crispy. If you do want something to follow, a 5 minute dessert is a sensible pairing. However, if you're somewhere cold, my vegan sticky date pudding in a mug and banana peanut butter cake in a mug only take 5 minutes to prepare. It might not be Jamie Oliver standards, but a meal and dessert in under 10 minutes

Jamie Oliver's Bloody Mary Beef

1 x 1kg piece of brisket olive oilhead of celery 4 small red onions half a bunch of fresh rosemary (15g) 2 fresh bay leavesBloody Mary mixlemon 1 x 700g jar of passata 2 tbsp worcestershire sauce few drops of Tabasco sauce 3 tbsp vodka 1 tbsp port. Season the brisket all over with salt and pepper, then add to the hot pan with a splash of olive oil and cook for about 10 minutes, or until gnarly and browned all over. Add the chopped veg to the pan, reduce the heat to low and cook gently for 5 to 10 minutes, or until slightly softened

Jamie Oliver’s Quick Lamb Tagine – low Fodmap & gluten-free

This recipe is from Jamie’s 15-minute meals and, as with all his meals, it was delicious. Even though I hustled, it took me 40 minutes to have it on the table, not 15 minutes but I have found that with all his recipes. I also have his 30-Minute Meals book and they always take me well over an hour. 6oz mixed colour tomatoes ½ green capsicum 4 spring onions (green tops only) 1 fresh chilli A small pot of Greek yoghurt 2 tbsp chopped coriander Method Place the aubergine in the microwave for 7 minutes

Jamie Oliver inspired vegan chickpea and carrot burgers

Cook the burger patties for several minutes on each side, until golden and slightly charred. Jamie features a vegetarian and vegan-friendly "happy cow" burger in his 15 Minute Meals book, and I had tried (and liked) that previously. Allow 30 minutes or longer for chilling the burger mix before cooking. Place on a plate or baking tray lined with non-stick paper and chill in the fridge for at least 30 minutes (I left mine for several hours)

Jamie's Griddled Kinda Nicoise

I was very kindly given Comfort Food for Christmas and am gearing up to cook something from that soon (pregnancy makes everything very slow) but the other night I was cooking for my mother and husband both of whom are trying to be virtuous in January and I'm very aware that the bump isn't getting its 5 a day so I randomly picked this Salad Nicoise from 15 minute meals. No potatoes and no egg but supremely delicious and finished by three of us and pretty easy to cook (and no it didn't take me 15 minutes but I'm a pretty slack cooker). Put the tuna on the griddle pan and cook for 2 minutes on each side or until blushing in the middle
