Nigel Slater's timing of cooking the red cabbage is much shorter, but while I love fresh crunchy cabbage in slaws and salads, it has to be cooked well in a dish like this in my opinion

Your favourite was Cherry Frangipane Ramekins based on a Nigel Slater recipe for Dish of the Month. It may not be the most photogenic of dishes, and I didn't think you could really improve on baked red cabbage,  but  Spiced Ginger Red Cabbage made with Mackays Spiced Ginger Preserve was even better than I expected

This recipe from Nigel Slater calls for mashed potato and shredded cabbage, but you can mash up any cooked potatoes and vegetables you like – I’ve used leftover roasties before now, just give them a good mash to get everything well mixed, then shape into patties and fry
