I was slightly disappointed with the rise but that’s only because I didn’t use a heaped teaspoon of baking powder and as mary berry and paul hollywood have taught me to always fold egg white into the batter until it’s no longer visible unlike this recipe it said Gently fold the egg white mixture into the batter

This is a recipe from Paul Hollywood’s new book ‘How to Bake’ which, by the way, is really good.  Every recipe I have tried so far has been spot on and in it lies the best lemon drizzle cake I have ever baked (saving that for another day)
