Caroline’s Colourful Chicken Curry

Add the cabbage, leek and garlic and continue frying until starting to brown. Ingredients (serves 4 hungry adults or 5 with kids). 1/2 green cabbage, chopped. 1 red and 1 yellow pepper, chopped. 2 tbsps mango chutney. Pour in the tomatoes, coconut milk and mango chutney, stir well and continue to cook for 10 minutes or until the chicken pieces are cooked through.
