For the poaching, I mainly use spices from the cupboard which add to give subtle flavours to the meat, but you can keep it even simpler by just using peppercorns and maybe a chopped onion or carrot

Spread the Finnish mustard all over the ham, using a knife or your fingers. Cover the gammon with cold water and soak overnight or according to your butcher’s instructions

Remove carefully from the hot water using a ladle or similar. Unpack the gammon, removing the outer wrapper (leave the binding plastic on and it keeps the ham in shape whilst cooking)

I baked some lemon & garlic focaccia and prepared some tasty sandwiches using some Hellmann's mayonnaise with a twist of pepper and a zing of lemon - who knew that there were so many varieties of mayonnaise

Soak the gammon according to the supplier's instructions. Then tear off two very large pieces of foil and arrange one lengthways and the other widthways over your largest roasting tin

Roast gammon with cider, calvados & apples

We now produce our own Gammon in the shop using Blythburgh Free Range Pork. Place joint in roasting pan and pour over the cider, apple sauce, calvados and add whole apples

Local Smoked Gammon

We will be using it for “cold smoking” our own Dry Cured Gammon (also produced on the premises). Come in and see us whether its for a whole ham (leg), boned and rolled joint or gammon steak
