I have made brioche a couple of times using the recipe in ‘the book’, each. I find using your hands works best here as you can give everything a right good coating. For one you would traditionally soak the dried fruits in brandy prior to baking but you may of noticed that I like to use Amaretto in my recipes and I've done the same here

If using a food processor, add everything except the egg and water, pulse a few times until you get a crumb texture, then add the egg and water and pulse again until the pastry starts coming together

Don’t overcrowd the bacon, if you are using a small frying pan, cook the bacon in batches. I used some leftover sausages I had from making hot dogs over the weekend
