Once the veg starts to soften, add the tinned tomatoes, coconut milk, stock, lentils and 2 or 3 more tablespoons of curry paste depending on how strong a flavour you want, then pop the lid back on and either let it simmer away on very low for about 45 mins or in the oven on 160C. 1/2 pint of good quality veg stock
