OK chaps, time to stop laying around the place, lets get to it.Turkey - strip off all the easily removed meat and either use it in one of the following suggestions or freeze in meal sized packages. If you have any gravy left over freeze the turkey in it.Turkey Meat and Carcass ~ Break the carcass into pieces, put into a large pot and cover with cold water, ~ Add a quartered onion, a few black peppercorns, parsley stalks, lemon peel, celery, bay leaves, carrot or just nothing! ~ Bring to a boil, turn down the heat, cover and simmer for about 15 minutes. Yes, just 15 minutes for now. ~ Remove the pieces of carcass from the pot and set aside to cool a few minutes. ~ Strip all the edible meat from the bones, return the bones to the stock and keep the meat.~ Return the stock to the boil, cover and simmer for another hour or so.~ Strain, and cool.~ If not using immediately freeze in usable portions.Turkey SoupI like to make this with leeks but onions work too.1 large leek or onion1 tablespoon olive oil or butter2 large potatoesturkey stockreserved turkey scraps~ Toss the leek or onion in the oil in a soup making sized pan over low heat. Press a butter wrapper or piece of foil directly on top without burning yourself. Cover the pan and cook gently till very tender.~ Peel and thinly slice the potatoes and add to the pot.~ Add just enough stock to cover the potatoes, bring to a boil, turn back to a simmer, cover the pot and cook till tender.~ Mash the potatoes into the broth or your could run through the food processor for a smoother finish.~ Add some cream if you wish. If you haven't frozen the gravy you could stir that in too.~ Taste, season and only now add the turkey scraps to the hot soup just to heat through.Turkey Fritters / Rissoles / Cakes Finely chop leftover turkey and mix with leftover mashed potato. Form into cakes and shallow fry till crisp.Turkey SarniesAdd leftover stuffing, ham, cranberry sauce etc. Spread the bread with leftover gravy or serve a little pot of warm gravy on the side to dip the sandwiches in. Or ...Turkey, Brie and Cranberry Sandwiches - just as it says.StuffingI often munge leftover stuffing into little balls and deep fry to serve with the above soup, shallow fried dice or croutons would work too.Add to turkey pies, sandwiches etc.Miscellaneous Savoury StuffBubble & Squeak In short fry leftover potatoes together with other leftover veggies in a little oil till hot all through and with a crisp crust. The secret (not really) to this is to let everything sit for a while over the heat before disturbing it to let the crust form. You could add leftover sausage, turkey, ham, stuffing and/or top with a fried egg.Make an Après Christmas Pizza with all the leftovers!Christmas PuddingFry in butter to reheat and serve with clotted cream and/or brandy butter..Make the best Christmas Pudding Ice Cream I know - I can't give the recipe because it is in my book and Amazon will take me off their KDP program if I duplicate the material. Hinty hint hint - in the UK go here, in the US go here.Christmas CakeThis doesn't count as it keeps for ages but if you want to get rid of it do as I do - have it for breakfast.Dates Obviously Sticky Toffee Pudding is the answer. Here is my recipe which I baked most days for 30 years!Sticky Toffee Pudding170g chopped dates1 tsp bicarbonate of soda 1 tsp vanilla extract.300ml boiling water.60g soft butter 170g sugar225g plain flour1 tsp baking powderpinch of salt1 eggs.~ Pre-heat oven to 350ºF/180ºC/160°C fan/gas 4~ Grease a medium sized (you know, about 9" in old money) ovenproof dish. ~ Mix together the dates, bic of sod and vanilla.~ Pour over boiling water, stir and set aside.~ Cream together the soft butter and the sugar.~ Sift together the flour, baking powder and pinch of salt.~ Whisk the egg into the creamed butter, if it looks a bit curdly add a spoonful of the flour.~ Now Then - gradually whisk in the flour mix and the dates mixture a bit at a time. Add some flour and whisk, some dates and whisk, some flour and whisk, some dates and whisk etc. till it is all in. Scrape down and whisk on high for a few seconds to mix well.~ Pour the mixture into the prepared dish and bake for about 40 minutes till risen and springy to the touch.~ Allow to stand about 5 minutes then turn out onto a cooling rackServe this scrummy pudding with Sticky Toffee Sauce, the recipe for which is here.
